Mixtas, A Guatemalan Fusion of Hot Dogs and Tacos

Mixtas can be found on street carts and fairs, and are ideal to serve up for a barbecue or birthday celebration. They consist of a corn tortilla, filled with guacamole, cooked white cabbage, a frankfurter, and the trinity of sauces: ketchup, mayonnaise, and mustard.

Ingredients:
  • 2 corn tortillas
  • 2 sausages
  • 1 avocado
  • 1 cup white cabbage, shredded
  • 1 teaspoon white vinegar
  • 1 lemon
  • salt
  • pepper
  • ketchup type tomato sauce
  • mayonnaise
  • mustard
  • hot sauce (optional)
Instructions:

1. In a pot with a little water, cook the sausages for 3-5 minutes. Lay aside.

2. In another pot, with a little water, cook the cabbage. When the water comes to a boil, add the cabbage and let it cook for 5 minutes.

3. Meanwhile, mash the avocados and season with lemon juice, salt, and pepper to taste. Lay aside.

4. Remove the water from the cabbage with a strainer, and season it with salt, pepper, and a splash of vinegar. Lay aside.

5. Now that the ingredients are ready, the Mixta is assembled: Cover a corn tortilla with a little guacamole, and do not add too much so that when the tortilla is folded to eat it, we prevent it from coming out too much on the sides.

6. Then add some cabbage, place a sausage in the middle, and top with some mustard, ketchup, and mayonnaise.

7. Finally, add a bit of spice if you are going to throw it out, and enjoy it with a cold beer!
