I enjoyed it. Very tasty and memorable. All small details and personal touch. Deserves a M star

I was a little hesitant about this restaurant because of some of the Google reviews, but I'm so glad I went. For context, I am new to the fine dining scene but I have been to several 2 and 3 Michelin star restaurants over the past 2 years around the world.

Quiltro easily could very easily be at least a 1 star Michelin restaurant, if not 2 stars, if the guide covered Guatemala. While the menu is very vegan/vegetarian focused, I didn't mind this one bit as each course was delicious or at the very least had unique flavor combinations worth trying. I could see the passion for integrating local Guatemalan and Mayan ingredients into each dish, and I truly appreciated the vision. I had several dishes that I loved, which is truly rare for me (I often find many fine dining restaurants have one or two stand out courses, and then the rest just supplement those courses).

The service was top notch, and I felt they had the perfect balance of explaining the dishes without going over the top with their explanations.

I think the one tiny critique I have is the wine pairing. The pours were incredibly generous, but they didn't explain why they picked these specific wines, which would have been interesting to understand. It's also limited to only 3 wine pairings but I was ultimately fine with this because, as I mentioned the pores are generous, and I felt it was sufficient for the meal.

Overall, an amazing experience, and I would definitely come here again when I'm in Antigua next time!!

As avid food travellers who live in London, we visit a fine dining restaurant at least monthly in the city, and travel every 8 weeks abroad. We love both street food and fine dining - looking for local or fusion tasting menus that stand out. Given this I can understand some of the mixed reviews.

The price is relatively high for Guatemala BUT you need to compare like for like. This is an intimate, fine dining restaurant with only 20 seats. 10 or 12 courses served over 4 hours. Each course is complex and linked to Mayan flavours. This is food you will not get elsewhere. Each dish is beautiful, we were stuffed by the end but luckily the dessert was light. The wine list is sensibly priced. Each course is a work of art.

Some people complained there is only a tiny amount of meat / seafood. This is true and one of the meat dishes the “beef” was not served in a traditional manner, so many people would not even count it as a meat course. However I think people were more annoyed linking this to the price. However across the world fine dining chefs are moving towards more fruit and vegetables and less meat and fish so Quiltro is ahead of the curve. The complexity of flavour with the courses and produce used is the blueprint for other chefs. I think when you consider the quality, complexity and unique nature, alongside the fact a 3 course dinner in local 5 star hotels will cost not much less, the price is reasonable.

What is more unbelievable is that on the night there are only 2-3 staff - the chef and the front of house individual(s) who do everything else. The chef was calm and methodical the whole night, serving up dish after dish with no sweat or stress.

My only note was the start time. Tables were definitely staggered for arrival - but we all pretty much got served the first dish at the same time - which makes sense if you have 1 chef. This meant some tables were waiting almost 1 hour for the first course and a much later finish than we expected. I would suggest a 30mins arrival time between 18:00-18:30, with first course to be served 18:30-19:00 with a note the experience will last around 4 hours so finishes 22:30-23:00.

One of the best meals my wife and I have ever experienced. Fresh and complex flavours, beautiful presentation in a serene and calming environment. And a one man show! Exceptional.
